Recipe first for 4 people based on Red peppers with tomato - cooking method pan.
Preparation: Start by washing the peppers, then clean them, possibly depriving them of the skins that cover them and cut them into pieces; clean, wash and cut the green beans into small pieces. In a frying pan, sauté the peppers, green beans and peas in a few tablespoons of oil over high heat, stirring well and remove them from the frying pan when they are wilted. In the same container, sauté the peeled and thinly sliced onion, then add the tomato and the rice previously washed with care and well drained, mix and let it infuse. Put the vegetables, rice, saffron, chilli powder, salt and lemon juice in a large pan, possibly made of terracotta not treated with potentially harmful paints; add the vegetable broth in the measure of just over double the volume of the rice, mix, bring to the boil, lower the heat, cover with a lid and cook very slowly without stirring. When the rice is cooked let it rest for a few minutes away from the heat and finally bring it to the table after pouring it onto a suitable plate.
