Calamari alla Marchigiana

Recipe second for 4 people based on Squid.

Preparation:

Preparation: Choose rather small squids. Clean them, cut the tentacles, wash them in plenty of water, dry them. Heat plenty of oil with a clove of garlic and a little chopped parsley. Add the squid, the boned and minced anchovies, salt and pepper in moderation. Leave to flavor for 10 minutes, mix; add the wine and a little water. Continue cooking, over low heat, for about 20 minutes. Serve. Accompanying wines: Lison-Pramaggiore Pinot Bianco DOC, Verdicchio Dei Castelli Di Jesi DOC, Bianco D'Alcamo DOC.
