Carbonara With Zucchini

Recipe first for 4 people based on Zuchinis.

Preparation:

Preparation: Cut the courgettes into slices. Heat 3 tablespoons of oil, brown the garlic then add the courgettes and cook over low heat for 20 minutes. Salt them halfway through cooking. In a bowl beat the eggs and the yolk with 4 tablespoons of pecorino cheese, salt and pepper. Cook the spaghetti, drain and pour into a tureen, mix quickly so as not to set the eggs, add the courgettes, a handful of chopped parsley and more pecorino.
